Cauliflower Butter Masala
Ingredients:-
• Cauliflower - 1/2 of a large size cauliflower
• Peas ( frozen ) - 1/4 cup
• Onion - 2
• Tomato - 2
• Cashew nuts - a handful
• Ginger - 1 tsp ( chopped)
• Garlic - 1 tsp ( chopped)
• Ginger Garlic paste - 1tsp
• Chilli Powder - 1 tsp ( as required)
• Turmeric powder - 1/2 tsp
• Cumin Powder - 1/2 tsp
• Garam Masala- 1/2 tsp
• Whipped Cream - 1 1/2 Tbsp
• Oil - 2 Tbsp
• Salt to taste
Preparation:-
1. Cut the cauliflower into medium size florets. Wash the florets and keep it in hot water with a pinch of salt for 10 mnts.
2. Heat oil in a skillet, add chopped ginger and garlic and saute it for 1 minute. Then add chopped onions and cook it till translucent.
3. Add chopped tomatoes and salt and saute it for 3 - 4 mnts. When its done switch off the heat and let it cool.
4 .When it cools, add cashew nuts & blend all to make a smooth paste and keep it aside.
5. Heat oil in a skillet, add ginger garlic paste, saute it for 1 minute and add the onion tomato paste and mix it well. Cook it till all moisture goes away. Keep stirring.
6. Add chilli powder, turmeric powder, garam masala and cumin powder.
7. Add the cauliflower florets and mix it well. Add enough water and cover it & cook for 5 minutes. Check salt and adjust it.
8. Add frozen green peas and cook it for 2 - 3 minutes.
9. Finally add whipped cream and let the gravy simmer on low heat for about 2- 3 mnts.
Cauliflower Butter Masala is now ready to serve.
Decorate it with some cream and serve it hot with Paratha / Rice / Dosa...
