Creamy Vegetable Korma
Ingredients:-
Onion ( chopped) -1
Potato ( chopped) - 1
Peas - 1/2 cup
Carrot (chopped) - 1/2 cup
Red Capsicum ( chopped) - 1/2
Corns - 1/2 cup ( optional)
Beans - 1/2 cup
Green chilli - 4 to 6
Ginger (chopped) - 1 tsp
Garlic (chopped) - 1 tsp
Cashew nuts - 10 to 15
Coconut milk - 1/2 cup
Turmeric powder - 1/2 to 3/4 tsp
Cumin powder - 1/2 tsp
Corriander powder - 1 tsp
Oil - 2 tbsp
Salt to taste
Spices:-
Bay Lea - 1
Cinnamon Stick - a small piece
Whole Cloves - 3
Procedure:-
1. Heat up oil in a skillet and add spices, saute it for few seconds and add onions, ginger, garlic and potatoes. Mix, cover and cook till onion becomes translucent , stirring in between.
2. Meanwhile blend the cashewnuts with some water. Let the paste be little watery.
3. Add remaining vegetables, add salt ,cumin powder, corriander powder and mix well. Stirring between.
4. Add the cashewnut mixture to the vegetables, mix well and cover it and cook for 8 minutes or till the vegetabes are cooked. Stirring between.
5. Add the coconut mixture to the cooked vegetables and cook it for 5 minutes. Check salt and add if needed.
Creamy Vegetable korma is now ready .Serve it with paratha or rice... Enjoy :)
