Brinjal - Dal curry


Brinjal dal curry
Ingredients:-

•  Egg Plant / bringal -  3 Small

•  Moong dal - 1/2 cup

•  Onion ( chopped ) - 1 medium

•  Tomato ( chopped)  -1

•  Green chillies - 3

•  Dried red chilli - 2

•  Grated coconut - 1/2 cup

•  Ginger garlic paste - 2 tsp

•  Turmeric powder - 1/2 tsp

•  Cumin seeds (Jeera) - 1 tsp

•  Mustard seeds - 1/2 tsp

•  Curry leaves

•  Salt to taste

•  Oil - 2 tsp

Preparation:-

 1.  Wash and soak dal in water, for 1 hour.

 2.  Heat oil in pressure cooker.

 3.  When oil heats up, add mustard and cumin seeds.

 4.  When the mustard pops add the red chillies & onions and cook till it becomes translucent.

 5.  Add the curry leaves, GG paste and chopped tomato ,green chilli and heat for a min.

 6.  Add the cut brinjal and moong dal and cook for 1 min.

 7.  Add turmeric powder, salt and coconut.

 8.  Add sufficient water (2 cups) and cook with cooker lid closed until 3 whistle.

 9.  After 15 mins, open the cooker, add a pinch of asafoetida (optional) and mix well in low heat .

Good with Rice , Pongal , Roti.
