Tomato Soup

Tomato Soup



Ingredients:-

• Tomatoes  - 6 ( medium )

• Onion - 1 small ( chopped )

• Garlic -  3 cloves ( minced)

• Carrot -  1/2 medium  ( chopped )

• Celery  - 2 inch stalk

• Capsicum - a small piece

• Sugar - 1 tsp

• Oil -  1/2 tsp

• Butter - 1 tsp

• Bay leaf  - 1

• Peppercorns - 4 to 6

• Peppercorns,- crushed -  1/2 tsp

• Salt  to taste




Preparation:-

 1. Wash and cut tomatoes into quarters.

 2. Heat oil and butter in a pan, add bay leaf, pepper corns and onions and sauté till translucent.

 3. Add the chopped garlic,capsicum and celery, saute it for few seconds.

 4. Add carrots and tomatoes, saute it  for a minute and add 2 cups of water. Bring it to boil & cook it for 10 to 15 minutes covered with a lid.

 5..Remove peppercorns and bay leaf from the mixture .Allow the mixture to cool and blend it using a mixer to get a smooth puree and strain it through a strainer.

 6. Check the consistency of soup.( if it is too thick u can add water).

 7. Put it back on heat. Add salt, crushed peppercorns, sugar and let it simmer for a couple of minutes.

Hot tomato soup is ready.... try it friends, its very healthy and tasty....
