Spinach Filled Paratha
Ingredients:-
• Wheat flour - 1 cup
• Spinach ( chopped ) - 2 1/2 cup
• Cumin seeds - 1 tsp
• Dry red chilli flakes - 1 tsp
• Asafetida - 1/4 tsp
• Salt to taste
• Oil
• Hot water for dough
Preparation:-
For Dough
1. Mix flour and salt well. Add a little hot water at a time to knead flour into a smooth dough.
2. Drizzle a few drops of oil to coat dough, cover and let it rest for 15-20 minutes.
Spinach Filling:
1. Heat oil in a skillet. Add asafetida, dry red chilli flakes and cumin seeds.
2.. After the cumin seeds crack, add spinach..
3. Cook the spinach till most of the water has evaporated.
4. Add the salt and mix well. Set it aside till the spinach cools off.
Making of Paratha:
1. Make small balls using the dough and roll it into medium circles.
2. Put the filling in the center. Seal by pulling the edges together and make into a ball.
3. Each ball needs to settle for 2 minutes before you start rolling.
. 4. Roll the balls, to make paratha.If the paratha sticks to rolling surface, lightly dust it with dry flour.
5..Heat the pan on medium high. Place the paratha over the pan.
6. After paratha starts changing color, spread 1 teaspoon of oil on the paratha.
7. Flip the paratha and lightly press the puffed areas of the paratha with a spatula.
8. Flip again and press with the spatula making sure the paratha is golden-brown on both sides.
Healthy Spinach Filled Paratha is now ready to serve... Enjoy... :)
