Fish Peera

Meen Peera



Ingredients :-

• Fish - 1/2 kg (small fish like Smelt )

• Shallots - 5 to 6

• Garlic - 4 to 5 pods

• Ginger - 1 big piece

• Green chilly - 5 to 6

• Coconut grated - 1/4 to 1/2 cup

• Turmeric powder - 1/2 tsp

• Kudampuli - 3 to 4 pieces

• Curry leaves - few

• Salt to taste

Preparation :-

1. Clean and cut the fish into small pieces.

2. Make a crush mix using shallots, garlic, ginger, green chilli, coconut ,turmeric pwr, curry leaves and salt.

3. Add crushed mix and kudampuli and little water into the fish and mix well.

4. Cover it and cook it in medium flame till done.

Meen peera is ready...Enjoy :)

Crab Curry

Ingredients:-

• Crab -  3 large

• Onion - 1 ( large)

• Tomato - 1 or 2

• Ginger - a small piece

• Garlic - 4 cloves

• Green chilli -  5 or 6

• Turmeric powder - 1/2 tsp

• Corriander powder - 2 tsp

• Coconut (grated) - 1/2 cup

• Cumin seeds - 1 tsp

• Cinnamon stick -  2 ( small piece)

• Cloves - 2 or 3

• Star aniseed - 1

• Curry leaves - a sprig

• Salt to taste



Preparation:-

1. Clean and cut the crab into medium pieces.

2.  In a kadai /skillet  heat oil, , add all spices and saute it  for about 30 seconds. Add ginger and garlic and saute it for 1
    minute.

 3. Add chopped onions, green chilli ,curry leaves  and saute it well till onion becomes translucent and add some
     turmeric powder.



4. Blend the coconut ,cumin seeds and salt to a smooth paste with some water.



5. Add coconut paste to the onions along with crab pieces  & chopped tomatoes. Cook until it boils.





Simple and creamy crab curry is now ready to serve....Serve hot with plain rice..

Ingredients:-

• Chicken - 1 kg

• Onion - 2 ( big )

•  Tomato - 1 ( big )

• Ginger garlic paste - 1 tbsp

• Green chilli - 4 ( as required)

• Coconut milk (thick ) - 1 cup

• Corriander powder - 1 1/2 tbsp

• Chilli powder - 2 tsp

• Turmeric powder - 1/2 tsp

• Garam Masala - 1 tsp

• Salt to taste

• Oil



Preparation:-

1. Heat oil in a kadai, add chopped onions, saute it till it turns translucent.

2. Add ginger garlic paste, chopped green chilli and saute well for 2 minutes.

3. Add  corriander powder, chilli powder, turmeric powder and garam masala. Mix well and add 1/4 cup water & cook it for few minutes.



4.Add chicken and mix well ,make sure that chicken is well coated with masalas. Add tomatoes.





4. Add 1/2 cup water and cover & cook chicken till its tender. Then add coconut milk and cook it for 5 minutes.







Chicken Mappas is now ready to serve.. Serve it with appam / paratha / rice.....

Ingredients:-

• Chicken ( boneless) - 1/2 kg

• Capsicum ( diced ) - 3 ( small ) I used 3 colours

• Onion - 1 ( large )

• Garlic - 5 cloves

• Ginger - 2 inch piece

• Spring onion - 4 stalk

• Red chilli sauce - 1 1/2 tbsp ( as required)

• Soy Sauce ( Dark )- 1 1/2  tbsp

• Corn flour - 2 tbsp

• Water - 1 cup

• Pepper powder - 1 tsp

• Lemon juice - 1/2 of a lemon

• Salt to taste

• Oil - 2 tbsp




Spices

• Cinnamon stick - 2 or 3 ( small piece)

• Cloves - 3 or 4

• Star aniseed - 1

Preparation:-

1. Marinate the chicken with lemon juice, pepper and salt. Set it for atleast 1/2 an hr.

2. Heat oil in a wok, add all spices. Add ginger and garlic and saute it for 1 minute.

3  Add capsicum and onion and saute it well till onion become translucent.



4. Add Chicken and all sauces and saute well. Add enough water and spring onion and let the chicken cook in the sauce .Stir continuously. Adjust salt to taste

5. Mix cornflour with 1/2 cup of water and pour it over the chicken and cook till gravy thickens.





Spicy Bell pepper chicken is now ready to serve . Serve it hot.. :)

Ingredients:-

• Chicken - 1/2 kg ( boneless)


For batter

• All purpose flour - 2 tbsp

• Corn flour - 1 1/2 tbsp

• Beaten egg - 1

• Pepper powder - 1/4 tsp

• Salt to taste

For Sauce

• Onion - 1 ( small )

• Green chilli - 3

• Garlic - 3  cloves ( large )

• Ginger - a small piece (  1 tbsp diced)

• Soy sauce - 4 tbsp

• Tomato sauce - 2 tbsp

• Chilli sauce - 1 1/2 tbsp ( as required)

• Oil - 1 tbsp

• Salt to taste

Preparation:-

1. In a mixing bowl, mix together all purpose flour, corn flour ,pepper powder, salt and egg, to make a light thick paste.





2. Marinate the chicken pieces and set it for atleast 1/2 an hr.



3. Heat oil and fry chickens till it turns light crispy. Don't overcook as chicken will turn hard. Filter the excess oil by spreading it on the tissue paper.



4. For making sauce, heat oil in a pan , add chopped ginger and garlic, saute it for few seconds ,then add onions.



5. When onion becomes translucent, add chopped green chilli. Saute it for 1 minute.



6. Add all sauces and mix well .Adjust salt to taste.( dont add too much salt, chicken is already  marinated with salt)  Cook it for 2 minutes. Stir continuously.



7. Add chicken to the sauce and saute well. Sprinkle some spring onion and cook it for another 5 minutes and turn off heat.




 Chicken Manchurian is ready to seve... Serve it hot ... You can make a flower using spring onion stalk to decorate the manchurian.  :)

Ingredients:-

• Mussels / Kallumakai  - 25 nos ( medium without shell )

• Ginger garlic paste - 1 tbsp

• Red chilli powder - 2 tsp

• Pepper powder - 1/2 tsp

• Turmeric powder - 1/2 tsp

• Cumin powder - 1/2 tsp

• Lemon Juice - 1/2 of a lemon

• Salt to taste

• Oil for frying

Preparation:-

1. Clean the mussels ( here am using cooked mussels, ie without shell ) and soak it in hot water with some turmeric powder, for 10 minutes.

2. In a mixing bowl, add all the above ingredients except oil and mussels. Make it into a thick paste.



3. Drain the mussels and marinate it with the paste and refrigerate it for 15 -20 minutes.


4. Heat oil in a kadai and shallow fry the mussels in a medium flame



Mussel fry is ready to serve. Serve it hot....  Enjoy...  :)

Ingredients:

•  Chicken - 10 pieces ( boneless)

•  Capsicum ( orange and red colour ) - 1 each (diced )

•  Onion - 1 ( large) diced

•  Pineapple - 4 or 6 square pieces

•  Potato - 1 ( big) diced

•  Lemon - 1 ( big) diced

For marinating Chicken:-

•  Ginger garlic paste - 1tsp

 • Cumin seeds - 1/4 tsp

 • Turmeric powder - 1/4 tsp

 • Chilli powder ( Kashmiri chilli pwd, it gives nice colour ) - 1/2 tsp

 • Lemon Juice - 2tsp -to 3 tsp

 • Salt and Pepper to taste

Mix well to make a thick paste...

Preparation:-

 1. Marinate chicken with above ingredients and set it  for 1 hrs.

 2. Arrange chicken and vegetables according to ur choise.

 3. Preheat the oven to 350 and cook the chicken  for 15 mnts.

 4. Baste the chicken with some oil and cook the chicken in the oven until it becomes tender.


Skewered Chicken is ready.. Serve it hot....

Palak Chicken

Ingredients:-

 •  Chicken -  1 kg

 •  Spinach (Palak) - 1 bunch

 •  Onions (medium size) - 3

 •  Garlic - 6

 •  Green Chillies - 4 - 6

 •  Cloves - 4

 •  Cinnamon  - 1 stick

 •  Bay Leaf  -1

 •  Oil for frying

 •  Salt to taste

For marinating Chicken:-

•  Ginger Garlic paste - 1tbsp

•  Turmeric powder- 1/2 tsp

•  Pepper powder - 1 tsp ( as required )

•  Plain Yogurt - 1/2  small cup

•  Salt - as required

Mix all the above ingredients and marinate the chicken. Set it for 1/2 an hr.

Preparation:-

  1.  Finely chop the onions, garlic and green chillies and set it aside.

  2.  Boil the spinach on low heat in a skillet till it is soft. Switch off and set it aside to cool.

  3.  Heat oil in a pan. Add cloves, cinnamon, bay leaf. Fry for a minute.

  4.  Add onions and saute till they turn pink.

  5.  Add finely chopped garlic and green chillies. Saute for few minutes and add spinach to it.

  6.  Fry this mixture for a couple of minutes and take the mixture off the heat.

  7.  Use the blender to grind this mixture to  a  fine paste.


 
8.  Heat some more oil in pan. Add the spinach paste from the blender.

  9.  Once the oil starts leaving the sides of the pan, add chicken and salt.( don't put too much salt.. Chicken is already marinated with salt )

 10. Cook on low heat till the chicken is done.

Spinach Chicken is now ready....
