Beetroot Chutney


Beetroot Chutney

Ingredients:-

 • Beetroot - 1 ( medium)

 • Onion - 1 ( medium)

 • Garlic - 3 cloves

 • Green chilli - 3 or 4

 • Curry leaves - few

 • Salt to taste

 • Oil - 1 tbsp

 • Lemon juice - 1/2 of a lemon

Preparation:-

1. Heat oil in a pan, add chopped onions, beetroots, garlic, green chilli, salt and currry leaves and saute it untill beetroots are well cooked. You can add lil bit water to speed up the cooking process.





2. When beetroots are cooked, let it cool and add lemon juice and  blend it into a smooth paste.

Simple, healthy beetroot chutney is now ready to serve.  Serve it with Uzhunnu vada / Sandwich / Plain rice.......

Mint chutney

Mint Chutney

Mint Chutney


Ingredients:-



• Fresh mint - 1/2 of a bunch ( washed)

• Cumin seeds - 1/2 tsp

• Urad dal - 2 tsp

• Ginder -  a small piece

• Garlic - 1 large

• Coconut - 2 tbsp

• Green chilli - 2

• Lemon juice - 1/2 of a lemon

• Salt to taste

• Oil - 1 1/2 tsp

Preparation:-

1. Heat oil in a pan. Add cumin seeds and urad dal. When urad dal turns golden brown, add ginger and garlic and saute it for 1 minute



2. Add coconut and saute it till it changes its colour.



3. Then add  mint leaves and saute it for 2 minutes. Keep it aside to cool .



4. In a blender, blend it together with lemon juice, green chilli and salt to make a smooth paste.



Fresh mint chutney is ready... Enjoy :)

Tomato Chutney


Tomato Chutney


Ingredients:

• Tomato- 2 med

• Shallots - 5

• Ginger ( chopped ) -1 tsp

• Dry chilly - 2

• Mustard seeds - 1/4 tsp

• Curry leaves - few

• Salt to taste

• Oil for seasoning

Preparation :-

1.  Saute sliced shallots, ginger, dry chilly and curry leaves in oil.

2.  When shallots turns golden colour, add chopped tomatoes and salt into it.

3.  When tomatos are cooked, remove it from fire and allow it to cool.

4.  After cooling down, grind it well.

5.  Transfer it to a bowl. Heat oil in a pan, season it with mustard seeds and pour it over the grounded chutney.

Tomato chutney is ready... Serve it with hot dosa or chapathi

Coconut chutney


Coconut chutney



Ingredients

• Grated coconut - 1 cup

• Green chillies - 2 ( chopped )

• Grated ginger - 1 tsp

• Roasted chana dal - 1 tsp

• Salt to taste


For tempering:-

• Mustard seeds - 1/2 tsp

• Red chilli , -1 broken into pieces

• Curry leaves - few

• Oil - 1 tsp

• Shallots - 2

Preparation :-

1. Put coconut, green chillies, ginger, roasted split gram & salt in a blender with some water & grind it to make a fine paste & keep it aside.

2.  Prepare the tempering by heating the oil & adding the mustard seeds, red chilli , shallots & curry leaves.

3. Pour this tempering over the chutney and mix well.

Coconut Chutney is ready... Enjoy it with hot dosa.. :)

Peanut chutney


Peanut chutney



Ingredients:-

 •  Peanuts - a handful.

 •  Ginger chopped - 2 inch size

 •  Tamarind paste - 1/4 - 1/2 tsp

 •  Coconut powder or dessicated coconut or fresh grated coconut - 2 tbsp

 •  Dry red chillies - 2 or 3

 •  Mustard seeds - 1/4 tsp ( optional )

 • Curry leaves  - 1 sprig (optional)

 •  Salt to taste

Preparation:-

1. Roast peanut, ginder, coconut, red chilli and  curry leaves with less oil.

2. Grind all with tamarind paste.

3. Season with mustard seeds & curry leaves.

Simple peanut chutney is ready
